i try to make sorbet using a small amount (1-2 tbsp) of water or fruit juice, in addition to frozen fruit...when i try to mix it, there are always chunks left over because when it becomes thicker they can't get to the blade, which is on the bottom...i don't want to add any more liquid because then it will start getting like a drink and not sorbet...

Try taking the fruit out of the freezer 15-45 minutes before you start making the sorbet. Or add some fresh fruit, such as banana. That might help.
