Anybody with experience with home brewing please help?
so my roomy and i decided to make sugar wine awhile ago. now that it is done i'm scared to drink it. The first thing was sanitize everything we used. hot water and soap thats it. next we boiled enough water to fill 2 1gallon jugs 2/3 full. after adding 2 cups of sugar to each one and the activated yeast i put on the cap but left it loose for airflow i then put plastic baggies and rubber bands over the top to keep it airtight. this did not work, many times i heard air getting in. i let it ferment for 11 days at which time there was constant carbonation this part was a huge success. last night i put the jugs in the fridge to go overnight and this morning i filtered the wine with a funnel and coffee filters (this took awhile. i bottled all of it into three forty bottles that were thoroughly sanitized. it taste like wine, has carbonation, and smells like a strong wine. but i'm scared to drink it. it seems safe. but i want second opinions. thank you and have a good day.
Hot water won't sanitize but the chances of your having grown something really nasty are slim. The chances of your having brewed anything worth drinking are slimmer. Next time, add some flavor (wine is made from fruits or vegetables), really sanitize the equipment with One-Step or something similar, and use a real wine yeast. You might also let it ferment to completion; it should not be carbonated. It's perfectly legal for you to buy what you need, no matter how young you are. It's the fermentation that is illegal.
If you are still worried, have a small portion and wait a day. If you don't come down with the creeping gombou, you can have more the next day.
