The Chinese wok or skillet pan, is probably one of the oldest cookware still in use and has become widely popular today. Steps for a successful stir-frying.
1. Preheat skillet pan until hot.
2. Add 1 -2 tablespoons oil and swirl it around its sloping sides. Less oil is needed due to its rounded bottom.
3. Add ingredients to hot oil to ensure ingredients start cooking immediately.
4. Add flavor enhancers such as garlic, ginger and followed by ingredients that take a longer time to cook.
4. Add in the ingredient that cooks the fastest last, followed by the sauces.
5. For better flavor and texture of meat, it is better to fry them separately by themselves and then only add to rest of ingredients near end of cooking time.
6. Meat must be sliced thinly.
7. Ingredients have to be tossed around and kept moving constantly to prevent them getting burnt at the center of wok where the heat is hottest.
