Do I eat too much vegetables and fruits?
Because I heard that fruits and veggies are healthy, but if you eat too much it can interfere with nutrient absorption because too much fiber causes food to pass through the digestive tract quicker. And sometimes I get gassy from eating too much of them. So here's what I ate today so far:

Spinach omelet (with lots of spinach)
2 sl whole grain bread
1 orange
L:
1 cup barley vegetable soup (homemade with lots of veggies)
Sandwich with grilled zucchini, eggplant, and bell pepper, sliced tomato, and fresh mozzarella cheese on whole-grain baguette
For dinner I am planning to have a chicken salad that will have lots of veggies in it too (spring mix salad greens, carrot, cucumber, tomato, onion).
After dinner I like to have fresh fruit, about 1-2 servings of it.
Is this TOO much fruits and veggies in one day? Is it unhealthy to intake this much fiber? Should I cut back? Because I know that my healthy eating mentality gets kind of extreme sometimes. Thanks
This sounds like a WONDERFUL diet! ... and you DID eat a protein source with each meal, so don't know why the other person said to eat more meat:) The bell pepper may be causing gas; and sometimes cucumbers, broccoli and cabbage varieties do that too - so just cut down on those if you feel bloated......
