I stripped off the original finish with stripper and then rubbed it down with steel wool and sand paper. I have tried using both a very dark gel stain and an oil based stain but the finish is no where near as dark as the finish that came from the factory. I thought it was a stain but appears that maybe it is some type of poly or paint that lets the wood grain peak through? Any assistance would be appreciated.
"Espresso" is not a standardized color. That is, it varies from manufacturer to manufacturer.
The times I've needed to produce something in that range, I've sprayed a dark red stain, let it dry then applied a wiping stain (e.g., General Finishes Espresso) or thinned black enamel. (Note that an oil-based enamel is basically varnish with pigment added).
Most factory finishes are not "one step in a can" but a procedure of multiple steps, sometimes as many as twenty.
I can also imagine that most espresso factory finishes have a toner sprayed on them. A toner is a finish with color in it. Practically speaking, toners must be sprayed. Brushing toners is quite difficult to get even without streaking.
Adding more coats of oil-based stain is eventually going to become a weak link, too. There is simply not enough binder to hold the pigment and every coat seals the wood more and more and prevents pigment from being able to stick.
Before continuing to experiment on your table, I suggest getting some scrap wood of the same species and running it as a test board -- this is what professionals do to develop a new finish routine or hit a color they are trying to match.
P.S. Please, please, not all clear finishes are polyurethane. NO factory finish that I know of uses polyurethane -- it is simply not a production finish.
