Belgian caramel dessert thing? ?
When I was backpacking in Europe I met a girl who shared these awesome desserts with us. They were round sandwich cookie type things: two thin layers of wafers (that looked like very thin waffles) with thick caramel between them. Has anyone had these or know what they're called? The closest I've seen is British digestives, but that's not really the same.
Also, she had some awesome bread stuff. It was super moist and full of whole grains (like pumpernickel) and it came in squares.... Anyone know what that might be?

The caramel is super easy to make.. take one can of condensed milk and boil the entire can for 3-4 hours (take the paper wrapper off first). It's called Dulce de Leche..
